I’m not sure who started the ‘bowl’ craze, but it’s pretty genius, actually. You, basically, pile anything, everything in a bowl either over potatoes, rice, or quinoa. It’s a great way to use leftovers!

And, if you plan ahead and plan for leftovers this meal can be on the table in minutes.

I opted for quinoa for more protein. Added blistered grape tomatoes, tasty pesto, and topped it all with a fried egg.

Yum.

This recipe has four tasty components. I love the zesty pop the blistered tomatoes give and the pesto gives the dish a bright, fresh note.

You may be asking yourself ‘why quinoa, why not rice or pasta?’

Most grains are low in lysine, therefore they are considered incomplete proteins. But, quinoa actually contains lysine, as well as all eight of the other amino acids, making it a complete protein, similar to animal proteins. One cup of quinoa provides about 220 calories and 8 grams of protein.

  • Tomatoes
  • Pesto
  • Egg
  • Salt and pepper
  • Parsley

Ingredients

  • 1/2 cup quinoa rinsed
  • 1 cup grape tomatoes blistered
  • 2 tablespoon pesto
  • 1 large egg
  • salt and pepper to taste
  • Parsley optional

Instructions

  • Cook quinoa according to package directions
  • Cook blistered grape tomatoes per directions in this post.
  • Fry egg. For Over-Easy, heat 2 tsp. butter in nonstick skillet over medium-high heat until hot. Break egg into a cup then slid it into pan. Immediately reduce heat to low. Cook slowly until whites are completely set and yolks begin to thicken but are not hard or until they reach the desired doneness.
  • Build bowl. Layer quinoa, tomatoes, and pesta in bowl. Top with fried egg. Season with salt, pepper, and pasley.
  • Enjoy.
