GUILTLESS CHOCOLATE CHIP COOKIES

I always get somewhat concerned with my sugar intake and gaining weight with all of the parties and goodies that come with the holiday season. That’s why I’m glad to have found Truvia® Baking Blend. This provides an easy way to lighten desserts.

It is a combination of natural sweeteners and sugar that provides a sugar-like taste and texture in recipes. It also bakes and browns like sugar. However, it contains 75% fewer calories! Shazam!! How awesome is that?!

It basically takes half as much Truvia Baking Blend to equal the sweetness of sugar. A 1.5-pound bag equals the sweetness of a 3-pound bag of sugar.

  1. Read through your recipe several times, then get out the ingredients and the equipment. This ensures you have everything you need.
  2. Also, cold ingredients must be at room temperature unless specifically stated in the recipe.
  3. Chill the dough. Almost all cookie dough needs to be chilled after you mix it unless the recipe specifically says not to.
  4. Cold butter will make a fat, chewier cookie.
  5. I use a spring-release scoop to scoop out the dough. This way all the cookies will be the same size. When they’re the same size they’ll be prettier and bake more evenly. This way you won’t have some cookies extra crispy and some with raw centers!
  6. Preheat the oven. You need to calibrate your oven at least once a year. Read How to Calibrate Your Oven.
  7. Place the dough on a piece of silicone matte on a sheet pan.

Ingredients

  • 1 cup butter at room temperature
  • ½ cup + 2 teaspoons Truvia natural sweetener
  • cup brown sugar packed
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 tablespoons milk
  • cups rolled oats
  • 2 and ¼ cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cup mini semi-sweet chocolate morsels

Instructions

  • Preheat oven to 375 degrees F.
  • Cream butter with Truvía® natural sweetener and brown sugar. Cream for 1 and ½ minutes then add eggs, vanilla, and milk. Mix for 1 minute.
  • Add oats, flour, baking soda, and salt, and mix until well combined.
  • Stir in chocolate chips until evenly distributed.
  • Roll 1 tablespoon of the dough into a ball and place on a cookie sheet. Place cookies 2 inches apart. Flatten cookies gently with the bottom of a glass that has been dipped in flour or cornstarch.
  • Bake 10 to 12 minutes or until lightly browned. Remove from the oven and cool for 2 minutes before transferirng them to a wire rack to cool.
