Captain Rodney’s Cheese Bake Dip

This dip is loaded with cheese, cream cheese, bacon, and Captain Rodney’s Boucan Pepper Glaze. What the heck is Captain Rodney’s Boucan Pepper Glaze? It’s a glaze that’s both sweet and spicy. Actually, this product was an accident that turned out to be the company’s best-selling glaze. If you can’t find it locally, you can get Captain Rodney’s Boucan Pepper Glaze here.

A substitution for this glaze would be Pepper Jelly. You can get Pepper Jelly here or at Walmart here.

How do I make Captain Rodney’s Dip?

It’s really very simple. First, you really need to allow the cream cheese to come to room temperature. This makes combining it with the other ingredients easier. If you forget to set it on the counter, you can always microwave it on medium for a few seconds at a time until it’s room temperature.

Combine mayonnaise, cream cheese, cheese, and onions together. You can do this in a mixer, which is the easiest way, or by hand. Spread this mixture in a pie pan.

Next, crush butter crackers on top and cook for 15 minutes.

Finally, when it comes out of the oven sprinkled cooked, crumbled bacon on top and drizzle the glaze over everything. If you are using pepper jelly instead of Captain Rodney’s glaze, microwave the jelly and stir it so that you can spoon or drizzle it over the cream cheese mixture.

For the bacon, you can either cook the bacon and crumble it or you can use real bacon bits. I really like this brand the best (also at Walmart here.)

This is a favorite wherever I take it! I purchased the boucon glaze on amazon. I do not like green onions so I omit them. Still delicious!

  2. I love this recipe, use the Tequila and Lime variety.
I’m getting ready for a big party. How far in advance can I make this. I can vacuum pack. Thanks, Kay

    1. You can make the whole thing except adding the crackers (they’ll get soft) 5 or 6 days in advance and refrigerate. Freezing it makes the cream cheese texture change somewhat and I don’t prefer it frozen.

This is one of the best dips out there!! I take it to all my holiday parties and get togethers every year. It’s gotten to the point that it has now become my most requested dish. I’ll be making it again today for a wine tasting “Dip n Sip” with my staff tomorrow. Of course everyone is given a choice on what they would like to bring, well I was signed up for this dip before even volunteering 😂
It’s wonderful and I highly recommend it!

I made this for my Mahjong group and it was a winner. Today I’m taking a double recipe to Garden Club. I used red pepper jelly. Thanks for the the recipe! I will be making it often.

  6. Want to make for a friend’s party but they don’t like spicy at all. Would they like it?

Everyone loves this!! My question is, could I freeze the dip prior to baking it? (I made a double recipe for a party, and put a smaller amount in another dish and never had to use that one!)

    1. I haven’t had luck freezing cream cheese or sour cream based dips. They get watery and the texture changes when they’re frozen.

I had never heard of this before and now, after having it, I will never forget it. Paula, this is SO good! I did use pepper jelly as I couldn’t find his sauce locally and it was spectacular. What a hit! Thanks for sharing the recipe.
