Captain Rodney’s Cheese Bake Dip
This dip is loaded with cheese, cream cheese, bacon, and Captain Rodney’s Boucan Pepper Glaze. What the heck is Captain Rodney’s Boucan Pepper Glaze? It’s a glaze that’s both sweet and spicy. Actually, this product was an accident that turned out to be the company’s best-selling glaze. If you can’t find it locally, you can get Captain Rodney’s Boucan Pepper Glaze here.
A substitution for this glaze would be Pepper Jelly. You can get Pepper Jelly here.
How do I make Captain Rodney’s Dip?
It’s really very simple. First, you really need to allow the cream cheese to come to room temperature. This makes combining it with the other ingredients easier. If you forget to set it on the counter, you can always microwave it on medium for a few seconds at a time until it’s room temperature.
Combine mayonnaise, cream cheese, cheese, and onions together. You can do this in a mixer, which is the easiest way, or by hand. Spread this mixture in a pie pan.
Next, crush butter crackers on top and cook for 15 minutes.
Finally, when it comes out of the oven sprinkled cooked, crumbled bacon on top and drizzle the glaze over everything. If you are using pepper jelly instead of Captain Rodney’s glaze, microwave the jelly and stir it so that you can spoon or drizzle it over the cream cheese mixture.
For the bacon, you can either cook the bacon and crumble it or you can use real bacon bits. I really like this brand the best.

Can you use bacon jelly could not find pepper jelly
I made this for my Mahjong group and it was a winner. Today I’m taking a double recipe to Garden Club. I used red pepper jelly. Thanks for the the recipe! I will be making it often.
I’m so happy you liked it. Thanks for your kind words.
Can you mix the base ahead and add crackers and bake later?
Yes, you can do that.
Want to make for a friend’s party but they don’t like spicy at all. Would they like it?
It’s not spicy, just flavorful.
Everyone loves this!! My question is, could I freeze the dip prior to baking it? (I made a double recipe for a party, and put a smaller amount in another dish and never had to use that one!)
I haven’t had luck freezing cream cheese or sour cream based dips. They get watery and the texture changes when they’re frozen.
I had never heard of this before and now, after having it, I will never forget it. Paula, this is SO good! I did use pepper jelly as I couldn’t find his sauce locally and it was spectacular. What a hit! Thanks for sharing the recipe.
Creamy and delicious. This dip is great with Fritos too!
Love the addition of the pepper jelly to break up all that richness. Yum!
What I use instead of Mayo or miracle whip – strongly opposed to both!
You can use sour cream or Greek yogurt.

We couldn’t find Boucan so we subbed in a friend’s pine-strawberry reaper jelly. Simple to put together and tasted amazing! Can’t wait to serve at our next get-together.

This dip is awesome! It goes together so quickly. I will be making this often. Thank you for sharing it.
What are butter crackers? I purchased the Rodney glaze.
Like Ritz or Townhouse https://amzn.to/36QEeIO
What type of pepper jelly would I use if I can’t find Captain Rodneys? Jalapeno, Red Pepper, Green Pepper?
I’d use red pepper. Orange marmalade is also good if you don’t like hot.
I purchased Captain Rodney’s online. It’s delicious!!!
This is the best dip I’ve ever tasted. Great with Frito Scoops. A southern woman made it, of course.
😍 thank you!!!
Why did mine turn out with what looks like grease in bottom of pan?
Thank you for this suggestion! I only serve it with Fritos now!
Love this dip!
