These fluffy Muffin Pan Pepperoni Pizza Bites are easy and irresistible snacks that take just four ingredients. Frozen roll dough is filled with sauce, cheese, and pepperoni for a quick prep and fun snack.

They are easy and kids will love them. They are great for lunch box treats, after-school snacks, parties, or game nights.

I like to pair them with Green chili cheese wontons, Indian-spiced popcorn chicken, Baked General Tso’s cauliflower, and Jalapeno popper dip.

MUFFIN PAN PEPPERONI PIZZA BITES

I’ve seen pizza bites (or cupcakes) made with a variety of crusts. I use frozen roll dough like this. You can make pizza dough or my Cr*zy Dough for Everything. You can also use

  • Flour tortillas
  • Refrigerated pizza dough
  • Canned biscuits
  • Bagels
  • Zucchini
  • Phyllo
  • Pretzel dough
  • Puff pastry

WHAT DO I NEED TO GET STARTED?

  • Frozen roll dough – I like Rhodes, but any roll dough is fine.
  • Pizza sauce – or marinara sauce
  • Pepperoni – or sausage
  • Mozzarella

VARIATIONS

Use any of your favorite pizza toppings: sausage, black olives, or mushrooms. Fresh mozzarella balls are always good.

  • Veggie. Finely dice bell peppers, onions, and/or mushrooms
  • Caprese. Add fresh mozzarella and basil. Drizzle balsamic reduction before serving
  • Hawaiian. Ham, pineapple, and peppers
  • Greek. Sun-dried tomato and feta
  • Pesto pizza. Basil pesto and mozzarella cheese.
  • White pizza. Add ricotta as the sauce and top with mozzarella and Italian seasoning.
  • Dessert pizza. Nutella topped with strawberries and mini marshmallows

Another fun fact, these Muffin Pan Pepperoni Pizza Bites can be made ahead of time and served at room temperature. If you’ll store them in an airtight container in the refrigerator they’ll be good for five days. Pop them in the oven for 7 to 8 minutes to reheat and serve.

Ingredients

  • 12 medium frozen roll dough thawed
  • ½ cup pizza sauce or marinara sauce
  • 1 cup mozzarella shredded
  • 12 medium pepperonis

Instructions

  • Thaw the rolls and allow to rise for approximately 2 hours.  (To hurry the process, you can heat the oven to 175°, then turn off the heat.  Spray a muffin tin with cooking spray and place a roll in each tin.)
  • Heat the oven to 375°.
  • Once the rolls have risen, press in the middle and press the rolls open. Add a large spoon of sauce, and a couple of tablespoons of cheese, then top with pepperoni.
  • Place the pan in the oven and bake for 15 minutes.  Lift a roll to check that the bottom is lightly browned before removing.
