Oatmeal Cookie and Cream Cheese Bars
I didn’t think I liked oatmeal cookies until a couple of years ago. My husband received some as a gift, and he made the mistake of bringing them home. I ate all of them and then proceeded to find myself the perfect oatmeal raisin cookie recipe. I made oatmeal raisin cookies, oatmeal and dried cranberry cookies, oatmeal and dried apple cookies, and oatmeal and chocolate chip cookies. Because… that’s what I do. I obsess about a recipe and make it and make it and make it until I get it just right.
These bars have a great contrast of texture between the cookie and the filling. Oatmeal cookie dough forms the base and top of these bars, with a cheesecake filling mixed throughout. It all comes together for a mouth-watering treat!

These bars make a wonderful sweet dessert. Because they are sturdy, they make good lunchbox treats.
I like this 8×8-inch pan for this recipe. You can also use disposable 8×8-inch pans which is great for giving.

- 17.5 -ounce package oatmeal cookie mix
- 2 large eggs
- 1/2 cup butter at room temperature
- 4 ounces cream cheese
- 1/2 cup sugar
Instructions
- Preheat oven to 350 degrees.
Cookie mixture
- In a large bowl of your electric mixer, mix together cookie mix, 1 egg, and 1 stick butter. The dough will be thick and stiff.
Cheesecake mixture
- In another bowl, mix together the cream cheese, 1 egg, and 1/2 cup sugar.
- Press half the cookie dough mixture in the bottom of 8×8 inch pan. Pour cream cheese mixture over cookie dough. Crumble the rest of the cookie dough mixture evenly over top of cream cheese mixture.
- Bake 25 to 28 minutes or until center is slightly set. Cool completely before cutting.
- Store in the refrigerator.

I made these with double chocolate chip mix because that’s the bag that I had in the pantry. They were divine! I didn’t cook them long enough, and we had to eat them with a spoon, but not one kid minded at all! Will for sure not be the last time I make this!!

If you doubled this recipe and put it in a 9×13 pan how long would you cook it?
They should cook in 28 to 35 minutes. Start watching at 25 minutes.
I added pecans to the oatmeal cookie batter and mini chocolate chips to the cream cheese filling and they were delicious.

i tried to put a spin on this! I put a can of apple pie filling in the middle also and a little cinnamon. I doubled and stuck in a 13×9. in the oven right now…. hope it works… for a birthday today!!

By a miracle, I actually had all the ingredients and decided to make this. I screwed up as usual and had thrown in all the ingredients together, when I realized I shouldn’t have. Rather than try to salvage the recipe by separating the ingredients, I mixed all of them together to try and make cookies. It worked! They were really good. I cooked half the batch and then added nuts and raisins when my husband suggested they would be good in there also, and they were. So the ingredients make a really good, easy cookie and I can’t wait to try the recipe as it was supposed to be done also. Thanks.
