Pimento Cheese Scalloped Potatoes is a cheesy potato casserole recipe that your whole family will enjoy. This is seriously the best side dish recipe, whether it’s a holiday meal, Sunday supper, or ordinary weeknight, this potato side dish will be a welcome addition to the table. It’s the perfect, comforting side dish.

WHAT IS PIMENTO CHEESE?
In Southern cooking, I’ve always known pimento cheese as a classic spread made with cheese, mayo, and pimentos. Depending on where you are, people might mix in other ingredients, but down here, that’s the base. I love it on bread, crackers, fresh veggies—or tucked into a sandwich.
We sometimes call it the “Pâté of the South” because it’s just that good—creamy, flavorful, and something just about everyone around here grew up eating.
Two of my favorite foods are potatoes and pimento cheese. I have many different recipes for potatoes, and I enjoy them all. As well, l have several recipes for pimento cheese. I simply combined two recipes to create this deliciousness!
Typically, a spread for sandwiches, every Southerner has a good recipe for Pimento Cheese. We love those old-fashioned recipes!

Pimento Cheese Scalloped Potatoes
This is one of the best recipes that you’ll find, and it’ll satisfy your craving for comfort food. Just like my Twice-Baked Potato Casserole, this one’s packed with flavor—especially with that creamy pimento cheese spread mixed in. Creamy, cheesy, satisfaction.

I cooked Yukon gold potatoes and spread a simple mixture of pimento cheese with them. Furthermore, I used Yukon gold potatoes. Yukon gold potatoes have thin skins and don’t need to be peeled. That’s one less step that I don’t need!
Additionally, I used Velveeta cheese. However, if you don’t like Velveeta, you can use all cheddar cheese in your recipe.

Pimento Cheese Scalloped Potatoes Cooking Tips
- Use starchy potatoes – Russets or Yukon Golds work best because they get tender and soak up all the creamy goodness without getting gummy.
- Don’t skip seasoning – Potatoes need salt. Season each layer if you’re mixing in cheese, bacon, or sour cream.
- Let it rest after baking – This helps the casserole set up, making it easier to serve.
- Make ahead friendly – You can assemble it the day before and just bake when you’re ready.
- Add a topping – Crushed crackers, cheese, or bacon bits on top add texture and flavor.

Pimento Cheese Scalloped Potatoes

Ingredients
- 1 cup Velveeta cheese shredded as best as you can.
- 1 cup Cheddar cheese
- 2 ounces pimentos undrained
- 1/4 to 1/3 cup mayonnaise
- 1/4 teaspoon black pepper
- 1/4 teaspoon celery seed
- pinch salt you may want to taste before adding salt, some cheeses are more salty than others
- 4 cups boiled cubed potatoes
- 1 cup heavy whipping cream
Instructions
- Mix Velveeta, cheddar, pimentos, mayonnaise, pepper, celery seeds, and salt together.
- In another bowl, combine heavy cream, half the pimento cheese mixture, and potatoes.
- Pour into 1- inch casserole dish.
- Top with remaining pimento cheese mixture.
- Bake at 375 degrees F for 35 to 40 minutes until hot and cheese is browned.
- Remove from oven and allow to cool 5 minutes before serving.
