Although I made plain grits for my Shrimp and Grits recipe, this Pimento Cheddar Cheese Grits Recipe would pair nicely with shrimp.

This Pimento Cheddar Cheese Grits Recipe is really creamy as a result of whisking while they cook. Heavy cream, cream cheese, and butter not only give them great flavor but a richness and adds to the creaminess of the grits. Pimentos add a nice mild flavor to jazz up the recipe.

  1. One of the most important tips is to salt the liquid you’re cooking the grits in. Grits won’t absorb any more salt once they’re cooked. I used 1/2 teaspoon salt for 1 cup of grits in this recipe. You may want to adjust that to your liking.
  2. Whisk the grits while they cooking to ensure the creamiest result. I mean whisk almost constantly.
  3. I used quick-cooking grits, not instant. You can also use stone-ground grits, but they take about 45 minutes to cook versus less than 10 for quick-cooking grits.
  4. You can also cook grits in a slow cooker. It will take 2.5 to 3 hours on high. Add the cheddar and pimentos the last 15 minute.

Instructions

  • Bring cream, milk, butter, and salt to a boil.
  • Whisk in grits and reduce heat to medium.
  • Cook 7 to 8 minutes whisking constantly.
  • Remove from heat and stir in cheese, cream cheese, pimentos, black pepper, and, if desired, cayenne pepper.
  • Plate and serve hot.
