Mexican Street Corn Totchos Recipe {Tater Tots Nachos} is a fun twist on a popular Tex-Mex recipe. Tater tots replace tortilla chips and are topped with Mexican Street Corn.

This recipe is great for summer poolside and barbecue parties as well as during game day watch parties. You really can’t go wrong any time you make this recipe! Great appetizer, side dish, or snack.

What are totchos? Totchos are a word scramble of ‘tater tots’ and ‘nachos’. As well, tater tots are used as the base for nachos instead of tortilla chips.

Just like Nachos, you can top your tater tots (Totchos) with any combination of ingredients.

I’ll go ahead and admit it. I love tater tots! I can’t pass on getting tater tots whenever we stop at Sonic (which, actually isn’t very often). Our affection for TexMex flavors and nachos inspired this recipe. I hope you enjoy it as much as we have been.

INGREDIENTS YOU’LL NEED FOR YOUR STREET CORN TOTCHOS

  • Tater tots.
  • Corn.
  • Cojita cheese.
  • Jalapeno.
  • Lime.
  • Cilantro.
  • Chili lime seasoning.
  • Sour cream.
  • Mayonnaise.
  • Chili powder.

HOW TO MAKE MEXICAN STREET CORN TOTCHOS

This is a straightforward easy recipe and great for teens to make. You’ll start by cooking the tater tots. I prefer to bake them instead of frying them but you can cook them however you want.

While the tater tots are cooking, stir together the lime crema ingredients. Place it in the refrigerator until you’re ready to serve the Mexican Totchos.

You can also slice the jalapeno and chop the cilantro while the tots are cooking.

When the tots are done transfer them to a serving dish and top with the corn, jalapeno, cotija, lime zest, and cilantro.

Finally, drizzle the lime crema over the totchos and dust them with chili powder.

You’ll want to serve them immediately.

Ingredients

FOR THE NACHOS

  • 16 ounces tater tots baked according to package
  • 1 cup corn fresh, frozen & thawed, or canned
  • 1 medium jalapeno sliced thin, or serrano
  • ¼ cup cotija cheese diary-free if you prefer
  • 2 tablespoons cilantro fresh and chopped
  • 1 teaspoon chili lime seasoning like Tajin

FOR THE LIME CREMA

  • 3 tablespoons sour cream dairy=free if preferred
  • 1 tablespoon mayonnaise egg-free if preferred
  • 1 medium lime zested and juiced
  • ¼ teaspoon chili powder

Instructions

  • In a small bowl, whisk together the crema ingredients, and refrigerate until ready to use.
  • Place the cooked tater tots on a serving platter and top with the corn, jalapeno, cotija, lime zest, and cilantro.
  • Drizzle with the crema and sprinkle with the chili lime seasoning. Serve immediately.
