I put together The Great Pumpkin Palooza because there are so many ways to use pumpkin besides the usual pumpkin pie. From pumpkin breakfast recipes and quick breads to cookies, cakes, cheesecakes, and fall treats, this collection has plenty of ideas for baking your way through the season.

I started growing pumpkins with my Mom several years ago. Mississippi summers aren’t exactly easy on pumpkins, but she kept watering them and eventually we had a crop worth watching. That experience made me appreciate pumpkin even more.
Now I’m happy to use canned pumpkin puree in just about everything.

Pro tip:
Make sure you buy 100% pure pumpkin puree, not canned pumpkin pie filling. Pumpkin pie filling already contains sugar and spices and isn’t interchangeable with pumpkin puree in most recipes.

What Can I Make With Canned Pumpkin?
Canned pumpkin puree is one of the easiest ingredients to keep on hand during the fall.
One can of pumpkin can be used for much more than pumpkin pie. Try it in:
- bread
- muffins
- coffee cake
- cookies
- blondies
- cheesecake
- French toast
- cinnamon rolls
- doughnuts
- cupcakes
How to Store Leftover Pumpkin Puree
If a recipe uses only part of a can of pumpkin, don’t throw the rest away.
Transfer leftover pumpkin puree to an airtight container and refrigerate it. Use it within several days, or freeze it in measured portions for future recipes.
Freezing pumpkin in 1/2-cup or 1-cup portions makes it easy to pull out exactly what you need for muffins, bread, smoothies, or other recipes.
Pumpkin Recipe Tips
Use pumpkin puree, not pumpkin pie filling.
They are not the same thing. Pure pumpkin is simply pumpkin, while pumpkin pie filling contains added sweeteners and spices.
Don’t overmix pumpkin breads and muffins.
Mix the batter just until the ingredients are combined. Overmixing can make quick breads and muffins dense.
Check your spices.
Pumpkin recipes often rely on cinnamon, nutmeg, ginger, cloves, and allspice. If your spices have been sitting in the cabinet for years, this is a good time to replace them.
Make pumpkin recipes ahead.
Many pumpkin breads, muffins, bars, and cakes can be made ahead. This makes them especially useful for Thanksgiving, fall parties, brunches, and holiday breakfasts.
