STRAWBERRY FETA SALAD WITH CREAMY POPPY SEED DRESSING

An abundance of fresh strawberries is making for incredibly strawberry recipes this summer. I’ve made Strawberry Cake, Strawberry Bruschetta, and Avocados Stuffed with Strawberry Salsa.

Now, I’m giving you a salad that everyone’s raving about! Fresh strawberries, sugar snap peas, walnut, red onion, and feta crumbles all tossed with a spinach salad then drizzled with the creamiest, dreamiest poppyseed dressing. Perfection! 

This strawberry salad is super simple to make. I recommend mixing the creamy salad dressing together and refrigerating it a few hours in advance. This way it’s thick, cold, and the flavors have gotten to know each other.

CREAMY SALAD DRESSING INGREDIENTS

Furthermore, the dressing recipe makes enough to have this salad a few more times.

  1. Mayonnaise. I like Duke’s or Blue Plate.
  2. Whole milk. 1% or 2% won’t be as creamy.
  3. Heavy whipping cream. Makes the silkiest smooth dressing!
  4. Honey*. You can sub Agave syrup or Date syrup.
  5. Apple cider vinegar.
  6. Poppy seeds.
  7. Salt and pepper. To your liking.

*By the way, honey is very good for you! Honey has a mix of amino acids, vitamins, minerals, iron, zinc, and antioxidants. It’s a natural sweetener, as well as contains anti-inflammatory, antioxidant, and antibacterial agents. 

Strawberry Feta Salad

FOR YOUR SALAD, YOU’LL NEED

  1. Spinach. I like baby spinach. You can also use Romaine, or bib lettuce.
  2. Whole fresh strawberries. You can add any berries or fruit that’s in season or that you have on hand. Try adding blueberries for a festive Memorial Day, Independence Day, or Labor Day salad.
  3. Sugar snap peas. You can also add or substitute avocado, asparagus, and, oh, try honeydew!! So good!
  4. Red onion. I prefer to use Quick Pickled Onions.
  5. Walnuts. Raw or toasted. As well, you can use almonds, pecans, pistachios, sunflower seeds, or cashews.
  6. Feta cheese crumbles. Goat cheese, blue cheese, and fresh mozzarella are all phenomenal with these flavors.
  7. Optional – add grilled chicken for an easy meal.

CAN I MAKE THIS STRAWBERRY FETA SALAD WITH CREAMY POPPY SEED DRESSING AHEAD?

Yes, I recommend adding all the ingredients to separate bowls (with lids) until ready to serve. Or, you can add them all together in an airtight container but don’t pour the dressing on it. Place them in the refrigerator and toss them together within a few hours of preparing.

As mentioned above, the dressing can be made up ahead. Store it in an airtight container in the refrigerator for up to 5 days ahead. I like to serve the dressing on the side. Having it on the side allows you and your guests to decide how much dressing they would like on their salad.

Ingredients

SALAD DRESSING INGREDIENTS

  • ½ cup mayonnaise
  • 2 tablespoons whole milk
  • 2 tablespoons heavy whipping cream
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 and ½ tablespoons poppy seeds
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper

SALAD INGREDIENTS

  • 6 ounces fresh spinach
  • 1 cup whole strawberries
  • ½ cup sugar snap peas
  • ¼ medium red onion sliced
  • cup feta cheese crumbled

Instructions

  • In a small mixing bowl, whisk together all dressing ingredients until well combined. Transfer to a smaller pouring dish, I used a canning jar. This helps make it easy to store when you are done eating.
  • Using a sharp knife, slice your strawberries down length-wise, slice your red onion into moon shape slices, and chop up your sugar snap peas into bite-size pieces.
  • In a large salad serving bowl, add spinach, strawberries, peas, onion, walnuts, and feta. Lightly toss to combine.
  • Drizzle your salad dressing on, about ¼ of the dressing you made, and toss again to combine. Serve & enjoy!
