I love potatoes. My mom does too. When we were growing up, my brother and I used to joke and say Mother had 101 ways to make potatoes. We had them roasted, fried, mashed and boiled. I think we had them almost every meal. I still could. Potatoes are so versatile and economical, now that I have a family to feed I understand why she made them so much.
We had a dish similar to this, but the potatoes were cut into cubes and not as many spices. I prefer thinner slices and lots of black pepper and parmesan!
Being the carb lover that I am, I always go for more potatoes, rice, or pasta over the meals meaty counterpart.
Slice potatoes thinly and soak in water about 5 minutes, this will draw some of the starch out.
Soaking is optional if you don’t have time you can skip this step.
Cover your roasting pan with aluminum foil for easy cleanup.
Drain potatoes and dry slightly with a paper towel.
Coat with oil and seasonings.
Place in a layer in the roasting pan.
Parmesan Potatoes
A single layer will result in crisper chips. The photo above shows the potatoes layered on top of each other. In the video, I spread the slices in a single layer and they turned out more crisp. Both are tasty, make them to your preference.
Serve with Creamy Basil Sauce recipe below or I also think crumbled bacon would be awesome, because really, can you have too much bacon?
This sauce is also good on fish and fish or shrimp tacos, on chicken sandwiches or a nice big hamburger!!
This would also be great served with Basil Cream Sauce
2 T chopped fresh basil
1 clove chopped garlic
1/2 c Greek yogurt
1/2 c mayonnaise
juice of one lemon
pinch of ground black pepper

Parmesan, panko, and seasonings make these roasted, one-pan Parmesan Potatoes a family favorite side dish recipe.

Sprinkle garlic powder, salt, pepper, paprika, and parsley over potatoes.
Arrange in a roasting dish.
Sprinkle Parmesan cheese and panko over top of potatoes.
Cook at 450 degrees F 18 to 25 minutes or until desired crispness is reached. Serve immediately.
