Parmesan Potatoes

Parmesan, panko, and seasonings make these roasted, one-pan Parmesan Potatoes a family favorite side dish recipe.

Parmesan Potatoes
Crispy on the outside and tender in the middle, Parmesan Potatoes are simple and full of flavor. Theyโre quick to prepare and go with just about any dinner. We like them best straight from the oven while the cheese is golden and crisp.
Use russet or Yukon gold potatoes for best results. You can swap Parmesan for another hard cheese, but avoid soft cheeses. They wonโt crisp the same way. Garlic powder or smoked paprika can add extra flavor.

- Yukon gold
- olive oil
- panko bread crumbs
- Parmesan cheeseย freshly grated
- garlic powder
- salt
- black pepper
- paprika
- dried parsley

Slice the potatoes thinly and soak them in water for about 5 minutes. This will help draw some of the starch out. Soaking is optional; if you don’t have time, you can skip this step.

Cover your roasting pan with aluminum foil for easy cleanup.

Drain potatoes and dry slightly with a paper towel. Coat with oil and seasonings.

Place in a layer in the roasting pan.
Parmesan Potato Tips
A single layer will result in crisper chips. The photo above shows the potatoes layered on top of each other. In the video, I spread the slices in a single layer and they turned out more crisp. Both are tasty, make them to your preference.
Two important tips
I don’t recommend making this recipe ahead. Theyโre best fresh. You can prep the potatoes early, then bake right before serving.
Also, don’t use the powdery Parmesan cheese. Freshly grated parmesan will crisp better.
Creamy Basil Sauce
Serve with Creamy Basil Sauce recipe below or I also think crumbled bacon would be awesome, because really, can you have too much bacon?
This would also be great served with Basil Cream Sauce
2 T chopped fresh basil
1 clove chopped garlic
1/2 c Greek yogurt
1/2 c mayonnaise
juice of one lemon
pinch of ground black pepper
This sauce is also good on fish and fish or shrimp tacos, on chicken sandwiches or a nice big hamburger!!

Parmesan Potatoes

Ingredients
- 1 lb potatoes I like Yukon gold, but use your favorite or whatever is on sale
- 2-3 Tablespoons olive oil
- ยผ cup panko bread crumbs
- ยผ cup Parmesan cheese freshly grated
- ยผ teaspoon garlic powder
- ยผ teaspoon salt
- ยผ teaspoon black pepper
- ยผ teaspoon paprika
- ยฝ teaspoon dried parsley
Instructions
- Slice potatoes then soak in water.
- Coat in oil
- Sprinkle garlic powder, salt, pepper, paprika, and parsley over potatoes.
- Arrange in a roasting dish.
- Sprinkle Parmesan cheese and panko over top of potatoes.
- Cook at 450 degrees F 18 to 25 minutes or until desired crispness is reached. Serve immediately.
