Why do we celebrate Cinco de Mayo?
St Patrick’s Day, as we know it in America, was promoted by activists to celebrate Irish culture, in order to fight prejudice against Irish immigrants. Likewise, in recent years, holidays associated with various other immigrant groups have begun to gain mainstream acceptance, most notably Cinco de Mayo, which has followed a similar path as St. Patrick’s Day. Activists started the holiday and people slowly embraced it.
It seems one culture’s holiday becomes everyone’s excuse to party! Furthermore, it’s fun to learn more about cultures through their food traditions.

So here we go! These are some of our favorite Mexican dishes. Not only do I have wonderful tacos for you, but I have side dishes, appetizers, desserts, and drinks! It’s so hard to choose just a couple of favorites because they’re all equally good. Therefore, I decided to host a party so I can enjoy all of them!
But, hey, let’s not limit these tasty dishes to just a holiday. You can enjoy them for Taco Tuesday or any random weeknight or weekend!

I made this in under 30 minutes. That even includes making the seasoning! It's easily adjustable to serve a few or a lot, just add extra peppers and more chicken.
